I've noticed that all the American Kirby's look angry but all the Japanese ones look happy/calm.

It was a marketing thing. They wanted to make Kirby look tougher so he would appeal to boys and girls. Japan is known for its cute things, so they didn't care when designing him initially, and neither did the general public.

It was a brilliant selling idea in my opinion. Good job Nintendo of America.
