Why have you chosen to have these cats have a forbidden romance?: At first, I and Grey wanted to be friends when Golden was an apprentice, especially considering that Jaystream always visited the Medicine Cat Den because he always got injured protecting young clanmates. However, we started to ship them because their personality were good complements to each other.
Goldeneye became Jaystream's best friend and someone he could rely on every time he needed advice. On the other side, Jaystream became a protector to her since the moment he saved her life in the Gorge when she was maimed by a WC apprentice. Goldeneye even took care of his kits with his former mate, Cinderpaw.
When Jaystream was mourning the death of his mate, she was there for him to comfort him. He started to feel something more than a friendship for her but due to Ivystar's sudden death and his ascension to the leader, he hasn't have time to think properly about what he was feeling.
But when the times comes, he will realize that he can avoid or deny what he feels for her so, in the end, he will confess. As mates, they would probably become a helpful aid to each other, she helping as a medicine cat and as a good adviser during his leadership while he will become the cat that would help her to escape from her duty and be more herself, not only the chosen medicine cat of their clan.
Do you understand that StarClan potentially may reveal the romance to Medicine cats?: Yep and it's pure irony XD.

Not only can RC discover this relationship, but it's also open to discovery from any other Clan so long as an MC rolls the Forbidden Romance dice and reveals it.
